Tropical Chicken Salad Croissants

Ingredients

1 1/2 lbs. chopped, cooked chicken (1 rotisserie chicken)

1 can (567g) pineapple tidbits

1/2 cup mayonnaise

1/2 cup chopped pecans

1 packet Tropical chicken Salad Mix

8 large croissants

Instructions

Drain pineapple tidbits reserving the juice. In a medium bowl, combine all ingredients except the croissants. Add in some of pineapple juice until it is the consistency you like and if you prefer it creamier you might want to add a bit more mayonnaise. Stir until well blended.

Cover and refrigerate at least 30 minutes. Spoon onto croissants and enjoy!
